Greetings and salutations!

I'm letting go of my Masashi 210 gyuto. This was one of my first few re-handles. Fittingly, the handle is mounted slightly crooked to the right, pic below. Additionally, the tip is slightly bent and I never got around to fixing it, pic also below. Sharpened twice on some kuromaku. A bit of patina starting to form.

$200 Conus
*Edit* Handle is Macassar Ebony.

Assume it's somewhere around 50mm tall at the heel?

Believe that this fellow deserves a spot in our knife rack - have a no-name 225 gyuto which has given OK service, but it's a PITA to sharpen & then it doesn't stay sharp - now that I'm cooking & prepping more, this is unacceptable.

I'll buy it for the asking, and promise to hide our Antimacassar....

Cheers

Jim

That's great! It measures in at 213*53. This really strikes a nice balance between semi-stainlessness, edgeholding, and ease of sharpening. I honestly don't know what to compare VS1 to, Knifewear says Chromax.

If you've got a antimacassar hoard, break me off a piece and we'll call it even. It'll be fun to stick it to those jerks at CERN.

All the antimacassar we've got was meant to protect the backs of fabric & wicker chairs from the dreadfully gooey stuff used to gloss up men's hair from about 1870 on.

Eventually, the macassar would so gunk & discolor the protectors that one either threw them away, or gave them to the servants to dye & use as decorative wall hangings.

The production of these wonderfully complex knotted artworks was considered to be both morally uplifting and a effective way to distract homicidally bored wives from dreaming about gently running hubbies straight razor up & down his carotid artery as he snored away...
