Right so here's the 240, definitely a dorito this one. White #2 clad in iron, bought about a year ago, sharpened 3 times, never thinned, but I did mirror polish the core with a morihei 9k, and I cleaned up the bevels with finger stones/slurry. Tbh it doesn't need thinning imo, this has one of the best grinds I've used, the convex s grind is excellent! Great heat treat, gets crazy sharp very easily, keeps the edge really nicely for white #2. This one has a custom handle from Joe at Sugi Cutlery, really really nice work, really nice to use and the grain on this wood looks incredible. Tried to get a good photo of that but failed.
