Really struggling to let this go, but here it is. Miura Itadaki polished AS gyuto forged by Y. Tanaka and sharpened by Nomura san. The grind is fantastic. An overall superb knife. Swapped out the original ebony handle with a ho D version but will include the original with purchase.
