I understand that it depends on the mine, it depends on the sample, and there are even vast differences within the same mine and same layer, but which layers are generally the most sought after? And for what reason?
 
most folks who enjoy edges in that grit range will enjoy a suita edge.

softer ones tend to be a bit coarser, harder ones tend to be a bit finer. but really either should be ok since you can use different technique to get different enough results.

the good ones are FAST. and that's part of why a big, pure, fast and fine suita can cost as much as a nice guitar.

I do enjoy suitas. Particularly ohira and Shoubudani. But these days, I like my hard nakayama tomae even more. And this is for knives.
 
Yeah the most common layers in this range would be Tomae and Suita. I enjoy the Okudo suita. If you like a hard layer you may look at Namito it is a deeper strata which is usually harder and very fine. I have a Nakayama Namito kiita which is nice for this range. They don't seem very common though.

Nakayama Namitos seem pretty rare.

Also, the Nakayama one I have is maybe the single best stone I own, and if it's not it's in the top 3. But the other namito stones Ive tried from other mines are kind of not the best stones. Reasonable and often really cheap, but even in that price range there are plenty of brown tomae stones Id rather have.

Yeah You don't see them really. This one was a nice razor quality Nakayama Namito I picked up years ago.
