Hello all,
The latest bit of experimentation has yielded fruit in the form of S90V san-mai. This will be the first knife I've made in this steel and thusfar I really like it.
For those of you unfamiliar with S90V, it's one of the more wear resistant stainless steels made today with edge retention very similar to 10v at the same hardness, scoring over twice as high as AEB-L at the same hardness: https://i2.wp.com/knifesteelnerds.com/wp-content/uploads/2021/02/magnacut-edge-retention-chart.jpg?resize=670,1536&ssl=1
Thanks for looking!
