Standard bearer for Japanese-made Chinese-style cleavers. Really cool knife to try. Usually retails for 2x this price, but Amazon JP was running a crazy Bezos special a while back while the Yen was low, and I'm passing on the great deal.

Excellent condition. Very lightly used. Sharpened once by previous owner but never by me. Includes urushi saya and packaging.

I've run the gamut of Y Tanaka B1 knives – this and a TxK Extra Height are the last ones standing. It feels smooth and laser-y on the board (as you can see from the choil) but without the brittleness of the TxK. Comparable level of performance to the FMs I've tried, and I give the edge on F&F and attention to detail to the Kagekiyo. The urushi lacquer handle is hard to capture on camera, but maybe the nicest on a J-knife I've tried.

Wonderful Myojin convex grind. Stainless. Great edge retention. Nothing much more to add – although if you want to read more, ModRQC wrote a typically in-depth review here. I just reach for 210s so rarely that there’s no point keeping this one

Barely used — sliced a steak and cleaned it off. First owner. Factory edge – never sharpened or stropped. Includes original packaging.

Original gyuto-sized handle swapped out for a slightly slimmer and longer one that feels better for a suji. When taking photos, I noticed a few small dings on top edge of horn as pictured.

Personally I love the feeling of wide bevel sujis, and 210/240s are more practical than 270s in tighter spaces. This is a beautiful example of one. I just never reach for a suji on the rack over the gyuto I'm already holding because I'm lazy, so my slicers end up sitting in their boxes.

Couple of small blemishes that I saw as I was taking the photos: tiny dings on the handle (horn) and light stray grind marks towards the tip. See close up photos.

Thanks! I knew that bit of forum code, but didn't realise I could still just use the last bit of the link after Imgur changed the link format.

FYI for anyone reading in the future: Imgur started including the album title inside the default link – e.g. imgur.com/a/sugimoto-6-zTmGxTh. This meant you can't just paste the links as-is anymore because KKF doesn't recognise anything after the first hyphen, but it works if you use the last 7 letters as Dave says above like this:

I would have jumped on this deal if I didn't blow my money on a Home Butcher bundle solely because it had a the Myojin sg2 gyuto... 😅
