Putting the following knife up for sale to free up some funds from other purchases. A few points, photos and video below.
Nakagawa Blue 1 Damascus Gyuto (Extra Height)
Price: $450 including shipping
Specs
Length: 240mm
Steel: Blue #1
Height: 58-59mm
1. Selling this as it doesn’t get enough usage currently and Im trying out some different knives.
2. I would say this is a middle weight knife. Not exceptionally thin but not a full workhorse profile.
3. Fit & finish on this is 10/10 and probably the second most eye catching knife I have behind a Fellipi wrought Iron
4. I’ve talked to several knowledgeable people regarding who the sharpener might be and the best answer is that it was an in-house sharpener under Nakagawa. A few people thought it might have been Myojin but the grind isn’t consistent with Myojin.
5. You’ll notice from the choil shot that the blade isnt 50/50 (heavier grind on right side). This was concerning to me when I first bought the knife but hasn’t been any problem after using it.
6. Bought for $600, I’ve used it a handful of times and sharpened once. Blade has a stable patina, I can remove and polish the knife if you’d like.
