Which Nakiri should I buy?

So, what is the secret? What did you say to Gaku? Is the secret password ’hammer’?

Member on the forum basically coached me on what to say about the grind, that I don’t want over-grind, what sort of pics to ask for, edge on table, choil shot, heel shot, I don’t want low spots, etc.

basically, it freaked Gaku out that he was dealing with a steel/knife nerd. So he said he would personally supervise the knife and finish it himself if needed.

That did the trick😊😊
 
He does those with Swedish Carbon does he? or am I mixing things up?... I sure would love one. If anyone ever departs of one for 500$ ... Yeah, hence why I'm trying to forget.

So if you just order without any special instructions, they'll work on your knife like this Archer hits the target?
 
Godammit lolllz. But I don’t pay much attention to knives I can’t afford. My brain wants to die or fly.

Edit: Then the Shig is the one I want to see for sale at 500$... :p

You're in luck the Shig Ku's are ugly ducklings of the Shiggy family. Get your's for way less than $300
 
In Canada I think it's Knifewear that holds these, and last time I checked the 165mm Santoku was like north of 400$... Don't want no rikiki smallish Santoku. Expect budget to be busted by any Gyuto if ever available again.
 
I was doing a custom order from Heiji for a friend of mine. One of the important details I learned in the process was, that at that time (nearly exactly a year ago) it was not possible to order knife taller than 50 mm. It might have changed since then, but if you want a tall nakiri, than you better ask about this explicitly.
 
Does it have to be specifically those brands? What are you looking for about the nakiri's in question, and at what price point?

A TF Denka seems to be JPY 50600 for a 165mm. If you go too much higher than that in price, perhaps it might be time to start having discussions with local Western knife-makers?

If you're looking for super-tall ones, CKTG has a section of tall nakiri's, ranging all the way to 75mm in height.

Denka is far out of budget, plus I already have one. Personally, I like dealing with makers rather than suppliers when possible, just ads to the fun for me.


Thank you @CiderBear That looks just like my ironclad Tojiro. I used an entire box of baking soda with that knife before I gave it away...
Also, fine finish hisamoto gyuto in the background?

Also, I was looking for something like 180g, 165mm x 65mm - 75mm, so if @Matus that rule still holds, Heiji will be a no go. 50mm height is rather short for a "maximum" height.
 
For those who own a migaki heiji in spicy swedish, how reactive is the blade and coating?

His fully reactive blades are like Shigefusa - pretty reactive.
