Ugh. I unpacked a nice Japanese gyuto from storage only to find it to have suffered some pitting -- must not have been properly oiled before I put it away for a big move. I tried what I could but my best is just not good enough and at this point I'd just like to send it off to a pro to deal with.
It's been some years since I was on this site (and spending way too much $$$ on Japanese chef knives!) so I'm out of the loop on where to send it -- back in the day it was a guy named Dave and a guy named Ken, but I can't seem to find them online now.
Recommendations? I'm on the far north coast of California, but obviously can ship wherever.
