Hi everyone,

I recently gotten into rectangles and I'm considering my next cleaver.

I currently have:
CCK small slicer (stainless)
212x95mm , 286g, 1.7mm thickness

CCK large slicer (stainless)
242x123mm, 507g, 3.15mm thickness


The small one I really like regarding balance and weight. The hard one is quite heavy buy has other uses.

What cleaver should I buy next? Ideally I'm looking for something with good steel and grind. Maybe something with good fit and finish
 
Any candidate in mind? What’s your price range?
I'm unsure about candidates as I don't know much about the cleaver market. I would say budget is maybe up to 500-700, but that doesn't nessesarily have to be a single cleaver.
 
SPVG23, it’s on their banner. Sugimoto no.6 is possibly the most famous Japanese made Chinese cleaver, the regular version is hard white 2, OMS is blue 2 with iron cladding

I love the cleaver profile so it's great to see so many other nice rectangles.
 
I'm currently really enjoying the CCK small slicer (212x95mm , 286g, 1.7mm thickness).
 
I bought a Dau Vua V3 cleaver. Needs some work, but was cheap and cuts fine.
After I thinned it and gave it a polish, it cuts even better.
 
I use a Enso HD 7" for pretty much all my vegetable prep and love it. They make a SG 2 version which I haven't tried but the VG 10 version has been a work horse for me. Great price also and holds a great edge.

Interesting. I've only read the the OMS has better fit and finish, not a different steel. And I've never found a vendor who has listed the actual steel of the regular or OMS.
He’s the only one I see says that so take it with a grain of salt I guess…

Get a Denka cleaver. You might get it within a year and it will have good steel. Perhaps even a decent grind... perhaps. Good fit and finish is a "maybe" for you? Very good. And they're super cheap - 1400 USD or maybe even less.

No, seriously - what is your budget? Are you more interested in something massproduced or in artisanal production? The latter will obviously be significantly more expensive.

Oh and should it be stainless or carbon or stainless clad carbon?

Thanks for your replies. I am reading and working my way through the megathread as I move in on my next cleaver purchase.

I guess my budget is 500-700 total, also interested get multiple cleavers and try something new. I'm still experimenting with different sizes and balance points.

I like stainless but I'm open to trying carbon too. I don't mind trying the mass produced items, but would also be interested in a higher end artasanial piece.
