I've been around this forum and reading advises from several months now, I think it is time now to me to take part of the discussions.
Iam a humble home cook from France, near Paris, and a knife enthusiast (western makers and Japanese) from a couple of years now. I began with factory quality knives, Japanese and then western makers. I have around 30 knives, and now I know what characteristics I like in a good kitchen knife.
I also bought synthetic and natural stones, I sharpen my knives but for now not really polishing them. I intend to increase my sharpening and polishing skills as well as buy / sell knives or stones.
