I’m currently living in the Ann Arbor area of Michigan and while not a chef by profession (chemist here) I’ve always enjoyed home cooking (it doesn’t hurt that my fiancé is a kitchen designer and did a stellar job in our kitchen)
I got my first hand made Japanese knife back in 2018 (Takeda 240mm kirutsuke) and wish I had bought more when they were cheaper haha
I’m also a fan of Fujiwara Maboroshi
