Hello,

I have only been into kitchen knives a short while, but the current hype with Kato fascinates me!

I am interested in compiling some measurements as it has been speculated that his dimensions have changed a bit over the years. I’ll maintain a running list in the original post. Please let me know if I need to add anything! Here is what I would like to know:

Size of knife, and Standard or Workhorse? (I.E. workhorse 210 Gyuto)

Handle material (very important IMO is it is a huge weight variable.)

New or used? Known sharpening/repair/thinning history if used?

Estimated year of production?

Measured weight?

Blade height at heel?

Blade length, heel to tip?

Spine thickness?

I think there was some measurements in a Kato geometry thread but I can post mine here.

Measurements of my 240std. 234ish length x 50. 230g on the dot with about 6mm thick coming out of the handle. BNIB so not thinned or modifies at all. Year 2018

210 WH is 215 x 49. 190g with 5mm at spine out of the handle and about 4mm over the heel. No clue on the year.

I do find the D handle on mine feels significantly larger than my 210WH D handle not sure if that’s just because it’s a 240 vs 210. Both unsharpened. Standards tend to run short and wh tend to run long.
