I have two wonderful @Knot Handcrafted veg cleavers and also bought a similar 52100 laser gyuto for a friend's 40th birthday. I got to play with the gyuto last weekend and have only high praise. Very smooth cutter as one would expect from the well executed laser grind. Nice blade forward balance, and that was with only 240×51, 176g, specs. This specimen is 238x56, 191g, so that extra height is lending even further weight to the forward balance. The extra height will also help mitigate against any "food creep" that inevitably happens with lasers.

Fit and finish is also excellent, very comfortable rokkau hanmaru handle. That feathered teardrop pattern on the spine is very attractive in person. And the 52100 patina takes a beautiful patina with vibrant blues, yellows, and oranges.

Lots of artistry and skill here. And Michael is wonderful to deal with from a customer service perspective. It literally pains me to see this knife sitting here lol, especially at the reduced price. I currently have multiple knives on the way and a couple of custom rehandles in the works, and I'm completely tapped out at the moment. But you better believe that a 52100 laser from Michael is on my short list for the future.

Thanks Jacob, that's very kind of you. It is much appreciated.
