For sale: Kawachi Kasumi 240 Kiritsuki Guyto in White #2 from Japanese Natural Stones.

New line from Maxim purchased in June 2023 as I wanted to try a Kiri Guyto as I did not have one in my line up.

Great all around cutter and excels at chopping.

Beautiful grind and distal taper. As far as I know, this is the only 240 Kiritsuki Gyuto Maxim has sold.

He is former student of very popular Kenichi Shiraki from Sakai, that now have started his own workshop
Hand forged and water quenched, Spine and choil is nicely rounded and polished
Edge on his knives is super thin with a nice spine tapper
Usually Sakai knives is bit undersized, his however is bit oversized then normal

What is the second to last Dammy on the left? Nice collection BTW
Second from the left is a Shun Kramer Meiji. I think it the only production knife I have. It’s a very nice package. Use it for breaking down cauliflower and broccoli sometime for butterflying shrimp.
