Originally got this as a catch and release, then it stuck around longer than intended because it's super fun. Now I gotta make room for customs and boat expenses.
Yoshikane SKD gyuto with Knives&Stones lovely teak handle. Semi-stainless core, stainless clad. 240x49mm and 185 grams. Very thin behind the edge, cuts like a laser but has a thicker spine so it's more comfortable to hold. Spine is 4.3 mm coming out of the handle, 3.5 mm at pinch so good comfort.
The steel sharpens up beautifully, in-line with what everything you read about SKD being carbon-like but doesn't suffer the micro-corrosion from acidic stuff that the shirogami/aogami steels do. Sharpened on a coticule with a bit of tooth this thing is a delightful tomato knife. I REALLY like the large flat spot on this knife, it isn't a complete hard stop, the very heel is relieved just a touch, but it's a fantastic push cutter. Nice forward balance point and thin tip for delicate work. There are 2 light scratches on the blade, they aren't deep and not very noticeable but I have documented in photos below. The teak handle is beautiful and super comfortable in hand, Buffalo horn ferrule.
Purchased $350 before taxes/shipping and all that, asking$300 $250 shipped insured.
