not replacing, but at the moment i'm using a kyoei aogami super gyuto and a tojiro santoku. i'd like to try a single bevel, also for the fun of it.
Ease of Use and Care
Edge Retention (i.e., length of time you want the edge to last without sharpening)?
dont' care much, i won't mind shapening it quite often... i have never had a white knife so i was leaning in that direction...

so... a deba. smallish, becuase 1 i dont0 like very long knifes and 2 i usually process small fish.
mostly for the fun of having a single bevel knife, a yana will probably follow.
i will be in amsterdam next week and i'm thinking of dropping by to karatsu to see what he have.
Hitohira Gorobei White #3 Deba 150mm Ho Wood Handle (D-Shape) | Karasu Japanese Knives this is what i'm eyeing... any feedback on the hitohira gorobei? would blue2 be better for 30€ more?
i'm open to suggestions, i won't mind buying second hand but i'm not seeing much on the forum.
i dont' care much for fit and finish, as long as the knife is good and there arent warps/lowspots, etc... i d' like to have a tool, not a project. i hope my budget is sufficent.
