Trying to restore two Japanese knives I picked up at a flea market for $10 each. Still a way to go to polish all my scratches but I’ve fixed severe chipping on the deba and broken tip on the 270mm Gyuto. Rust cleared out and now they are razor sharp. Worth continuing the project? Can anyone tell me anything based on the markings? I feel like the 270mm gyuto is white HC steel and the deba is blue HC steel, and love the idea of bringing them back into service after being left for dead. But I’m brand new to this wonderful world and welcome expert advice.
