Friday is another Wife's Supperclub.
this time i am taking them to El Paso, TEX..which i believe is unique in their style of Mexican food. not tex-mex, not mex-mex. i cant explain it.
i am doing my version of Chile Verde, Mexican rice, Guacamole, salsas...and a Butterscotch Flan. hahah.. should be easy. i am doing the Main dish tonight, chilling it, pull off the fat that i can..and reheat the braise friday night. Dessert, i'll make tonight as well. party evening, all i do is chop stuff and reheat the meat, warm the store-bought tortillas, pour out the bag of tortillas chips.
kinda nervous, because a pro-chef is amongst my wifes guest. damn....it's go time.
