Presuming this is a Sabatier knife. Does anyone recognize or can identify the logo on the handle. It also appears to be carbon steel but could be wrong on this. Any guess based on ID and appearence

It isn't necessarily the maker's name. Could be very well the retailer's. I'm afraid I can't read it.
At the time it has been made there were only a few makers left — it's none of them.
