Up for sell is a Shigehiro gyuto with an “upgraded” handle of ebony and blonde buffalo horn. Forged from shirogami #2 steel rated at 62-63hrc and cladded in iron. A true badass knife, I have yet to handle another that cut through butternut squash as easily as this one. Ease of cutting and food separation are among the best.
