Paring down the knives. Selling a Shi.han gyuto in mono A2. I'm the original owner. Purchased last spring directly from Shehan. 231mm heel to tip, 53mm tall at heel, 232 grams. This cuts as well as anything I've ever used. His A2 is tough, relatively corrosion resistant, has cool banding, takes a great edge easily, and keeps it. The profile is just right. Handle is crosscut maple of some kind if I recall correctly and balances well. Really a great package. I've used it at home, never thinned, did check the bevels on a blue speckle JKI 6k and, of course, they're flat. Removed some patine with some 6k wet dry paper. Always used on a soft board: end grain maple or hi soft. Touched edge up on a hard Aizu but that's as aggressive as I had to go. Price is shipped via USPS Priority. US only please.

Only trade I might consider is a Raquin in 145sc/xc10.

SOLD
$750
