Was lucky to pick up this @eddworks a bit ago from his Etsy drop and have had it now for a few weeks. My first western knife that’s not a beater. Immediately this knife put a smile on my face when I started using it and it has been a joy to use in the kitchen. Really like the profile, nice taper, super thin tip and comfortable handle. OTB edge was scary sharp, super thin behind the edge. 196x67

Shi.Han: this knife is ready to start, fight and end wars with style kudos to @EricEricEric for the polish. Probably my favorite of the bunch.
Yanick: beautiful piece of metal and wood. The hype is real.
Kato: this is the most balanced of the three. It feels sturdy but with a very nice tip.

I need help with my photography game btw :).

I found him through Instagram with open books and took the opportunity to ask for a custom 270mm. On the way I asked him to try and combine copper bubbles with his unique stainless bubbles and the result was this 150mm nakiri. The steel for both is 125sc. Even the places where it falls off adds to the fantastical aesthetic that made me attracted to his work, and imho - This is his finest yet. Pictures do not do them justice. Give him a follow and maybe some work

Nice buys! I’m curious to hear how they perform - they look nice and thin BTE.

Mental. His knives are already so good, but with experience making customs like this they’ll be flat out epic in the future. More handle than his norm on this fella, must have a decent tang to balance the weight.

That is wild. Haven't seen many makers creating s grinds with magnacut.
 
A pretty busy two weeks for me. Lots of outgoings and incomings (with a couple more on the way).

I thought it was fascinating to see how the gyutos performed side-by-side, and even attempted a cutting video that was unceremoniously interrupted by my toddler screaming for more raspberries. Will try again another time...

F&F is pretty darn good for the price as well.

I haven’t taken actual measurements yet but they appear to be pretty true to size.

All amboyna burl handles, one with blue resin because why not.

I’m an idiot and didn’t get sayas but they came with decent quality leather sheaths.

These are all 5160, spring steel. The Keskin line is definitely a step up and from talking to others, it seems the Keskin line is also substantially more consistent in grind.

Yeah they'll point you to their ready stock. I'm not sure how to order things they haven't made yet, but I know other people have. I've got two Keskin honyaki and think they are great. KITCHENKNIVES.ID
 
My goodness, mind sharing what you are getting for your 4th? If memory serves me right you had a gyuto right? A suji or a deba is next?
Lol tbh I have no idea yet. Just said TBD and I'll decide in a few months. The wait is up to 6 months now. 270 or 300mm Suji sounds like a pretty good idea tho hmmmmmm
 
I have a Munetoshi Gyuto that I have only used couple of times. I sent it to a Japanese sharpener for thinning. Now it has become a laser with crazy taper. It is so thin towards the tip it cuts through onion like a razor.
