Here’s a 220mm Shihan “Telegraph Wire” Gyuto. One of the first ones he put out, so this doesn’t have the touch of KU. Never sharpened and only used twice, just removed the patina off this baby with some flitz. Unfortunately, because the edge guard doesn’t really offer a lot of protection, there are some scratches around the heel area of the knife, which you can see in the video.
