WTB Something Spicy and Wide Bevel AKA take my money

Hi All,

So like it happens every so often, I get bored and want to try something new. I'm on a wide bevel kick currently because I like putting a nice finish on them and dig the ease of thinning/refinishing over time. That said, I'm looking for something spicy, something fun. I'm thinking something like Heiji Carbon or Shigefusa KU or the older JNS Mazaki stuff? Really I'm pretty open here but looking for something spicy and wild and fun and most importantly, wide bevel

Profile wise lets say nakiri or small gyuto like 180 or an undersized 210 maybe? 210 might be fine too but generally I stick to under 240mm Gyuto wise based on kitchen space.

For wide bevel I would say Hado or Kyuzo or even Yohei. If you wanna stick with Sanjo style (tall but not wide bevel), old Maz (hand laminated) should be good too but more on the WH side. A 180 mm Mazaki gyuto would definitely be fun to use in the kitchen. Lucky if u find a Shig and a Heiji (u can direct order from him with a wait time of couple months). In the range of 180 mm I would also consider SG2 from Myojin. Good luck and let us know what u got!

I got this sorta. Its thin enough now that I don't feel steering so that's fine, but up to you

I also have a stainless white wakui nakiri for about the same I need to thin and hap40 nakiri for about the same as well
