1) Morihei Hisamoto 211x52mm, 196g. ( no bolster ) $250 $240 SOLD
Polished up on naturals and quite nice. Thin but not to thin BTE.
2) AG Klint Gyuto (80crv2) 265x57, 314g $375 SOLD
An absolutely perfect gyuto, a whopping 7mm out of the handle tapering down continuously to a needle thin tip. 80crv2 steel feels crispy and hard and with just a tickle of vanadium to improve edge holding. Dead straight.
3) Mazaki nakiri 167x53mm, 212g $190 $180
My old polishing mule. Used to test naturals but I have recently acquired a little Shig nakiri that will be filling that role. Fantastic cutter.
4) Watanabe 275x60, 296g (Iron clad) $600 *sold*
Sharpened once. A venerable classic and an example produced before some of the lower quality iron clad KU gyutos that floated around recently. Don't want to sell it but embarrassingly I have two of these rascals.
