Much will depend on what you're looking for. The Chosera — Naniwa Professional these days — delivers a 4k final edge, is very fast and allows huge jumps — think 320>NP — with a little number of strokes. It's a splash and go, although a lot of people will apply water on top and wait a few minutes. Remarkable is the both tactile and auditory feedback it delivers. With varying the amount of pressure, water, mud, you may get very different results.
Hard to imagine the need of any finer one after it when used with double-bevelled knives in Western cuisine.
Great for touching-up.
The Ouka is a soaker. Will work very well in a conventional progression. Available in a smaller size, and much less expensive. Haven't used it so far as a last stone.
Can't compare their qualities as a polisher, if that matters.
 
Some other pertinent questions for us to consider while we're at it...

Sword, or Pointed stick?
Rolex, or Sundial?
Ferrari, or Donkey?
Preventative medicine, or Leeches?
17 bedroom chateau in the Dordogne, or Living in a hedge?

Ouka 3000, cerax 3000, chosera 3000, morihei 4000, rika 5000, masahiro 3000 will all deliver similar edges. Chosera 3000 will stand out if you want a glossy mirror polish.

If you want a noticeably finer edge than what these give you, you have to go into the 6000 grit stones. But by that point, I would just go into jnats.
 
Listen. The Chosera 3000 is Ryky the God himself, Burrfection's favorite whetstone. That is all you need to know.

I don't have the Ouka 3K but the Chosera 3K is probably my least favourite stone in the chosera line.

The 2K is a way better stone in my humble opinion.
Curious how you can substantiate it. The Chosera 2 and 3k have a totally different character.The 2k makes an aggressive start but will be ending around 3k. Excellent. Great last stone with a lot of stainless, one would expect.There is a problem, though. For proper deburring, you restart with a clean stone. And there the initially aggressive character is no advantage. Very hard to gently abrade a burr without raising a new one with every stroke. Only solution is to first raise some mud and dilute it. Or deburr on another stone.
 
Have the Ouka, love the Ouka, never tried the Cerax.

They're the same stone btw.


That and the Chosera 800 are probably the two best stones in that series.

I'd actually agree with this sentiment too. When I tried the NP lineup a while back the 800 and 3k were the only ones I felt were worth bothering with particualrly. Interesting to see so many other people feel they're the best of the range too.

The big problem that both have imo) and why I've never owned either myself, is that they come up against some real gems at the same grit levels. The King 800 is completely superb, and as @JPO pointed out to me yesterday - the SP1K has an almost identical particle size to the Chosera 800.

And then of course the Ouka / Cerax 3k is probably the best Japanese synthetic waterstone ever made.*

Those two NPs are both undeniably good stones, no one would be disappointed with them. They're just unfortunate that they're playing in very tough divisions.**




* Maybe along with the SG500.
