The herd thinning continues. I can nearly fit all of my knives on my racks (just nearly) A couple of more and this lofty goal will be within sight! I know some of you can empathize.

Takamura 210 R2 - SOLD

Nearly everyone on the forum is familiar with this knife. It is a well known laser with a strong reputation. I just had to try one out. I was not disappointed. This has been one of my favorite home meal prep knives and I have been on the fence about selling it. I ended up keeping a Tadatsuna INOX instead. I got this used, and I used it more, so there are wipe scratches etc to show its age. But I did also replace the handle with stabilized pyinma/satinwood burl with mosaic pin. This was an exceedly challenging refit as this line uses a half tang construction to ove the balance forward. The handle is made from the same burl wood.

Sukenari 210 K-tip Hap40

This has been a reliable line knife in my rotation for years. Another one I am on the fence about because I still like to use it. The Hap40 maintains a good edge for an amazingly long time once it is sharpened. Since it has been a regular user, it has been sharpened and it has been thinned. I have had to clean up the finish with sandpaper. The handle is a western wa made out of stabilized curly oak with a brass face plate. The handle is very comfortable and easy to grip during a long service. I made the saya out of matching curly oak with really interesting grain and chatoyance.

Sugi Cutlery (Teruyasu Fujiwara) White1 240 KU

This knife is a Sugi branded offering from TF. The bevels have been cleaned up by 40 Knives and it features a beautiful apalted chechen burl/blackwood handle from JoBone. I made a complimentary saya out of ambrosia maple and an inlay of chechen burl. Very sweet looking knife, that I would be keeping had I not discovered that I prefer TF western handles
