Feels very close to Jikko mono Ginsan, I feel like it is the same knife but can’t be sure, steel feels better than VG1 but not Moriya Ginsan

Good steel, like it a lot SOLD
3. Sakai Takayuki 270mm Grand Chef Sujihiki$150 $130 $120
Steel feels surprisingly good if it is N690, not glassy, tho not the fastest to raise a burr
