I'm searching for a ˜255mm long gyuto, preferably ˜55mm tall at the heel. This length is more or less the equivalent to a Sakai 270, but they usually come in shorter than that.

Are there any makers in Sakai doing taller knives? All my other gyutos are workhorses so I was thinking something midweight but not too laserish. Again, seems to be a good fit with Tanaka and other makers in the region.

Or should I just give up and look to western makers?

Thanks!!

Check out the Hatsukokoro Komorebi (kasumi and dammy lines). I've seen them up to 250x57ish. I believe they're made in Sakai.

I googled it and found your review, haha. The 240 runs long and seems like a great option, good price also. Seriously considering it.

I also found the Migoto 270, at 54/55mm tall.

Love my Kyuzo extra height. Don't recall seeing one longer than 240, but the height fits your search.
