SOLD1st is a Konosuke Sumiiro Madei 240 SLD gyuto - Nihei forged - saya included. I'm convinced Nihei and Masashi do SLD best. Fantastic piece that feels sleek and athletic in hand. Used for 2 meals, only stropped, original owner.

**SOLD**2nd is a Hado Kijiro Ginsanko #3 240 with Natural Nuri Urushi Lacquer over cherry handle. I went on a ginsan and lacquer spree for a bit. This is unquestionably the most gorgeous piece of the spree and surprisingly the best cutter imo. This ginsanko is forged by Yamatsuka and ground by Maruyama. Top drawer fit & finish. The handle is absolutely gorgeous in person. It stays tacky when wet, like other nuri lacquered handles. Used for one meal, only stropped.
Blade dimensions: 227 x 50, 183g. Bought from Strata for $500 and selling for $425 > $400 > SOLD.

3rd is a JNS Y. Tanaka special. I got this in a trade from the original owner who had only stropped it. I touched it up on a 1K and 3K nanohone and stropped. These are special order from Maxim at JNS that emphasized a thin tip and BTE, tall heel, but still a healthy spine. The tip is just glorious on it, absolutely delivered. Maxim flattens the bevels, rounds the spine and choil, then stone polishes the blade. He then a burnt Chestnut and Horn handle (Burnt chestnut likes to stay grippy when wet). Tanaka nailed the cladding and has his signature islands.
Blade dimensions: 230 x 50, 183 g. Original Price $700 and selling for $550 > $500 > $450.

Sold!!Last, but not least (well maybe), is a Nigara x Hatsukokoro 240 Aogami 2 Damascus clad K-tip w/Hairline finish. These were on sale at Home Butcher and had some cosmetic blemishes on the spine that I have pictured. I honestly wasn't expecting much out of this one and have been very pleasantly surprised with its performance. Great cutter with decent food release that is assisted with the hairline finish (sandblasted basically). Nigara and Hatsukokoro have been doing some great partnerships lately. The chiseled K-tip combined with the damascus cladding makes the tip nice and thin and also exceptionally eye-catching. There's also a slightly thicked bolster area that, combined with the rounded spine and choil, make for a very pleasant cutting experience overall. Just a great package all round.
Blade dimensions: 230 x 51, 258g. Ebony and horn handle with the balance at the maker's mark. Paid $275 and SOLD!! for $225.
