Thrift shop find - help with knife ID, please...

All:

I purchased this knife (along with the pictured K Sabatier granton-edge Santoku) at a local thrift shop for $1.00 each. I am 99% sure I am seeing am identical faint K Sabatier logo on this other knife as well, but after perusing their online offerings oddly nothing about its design screams "Sabatier"? I have never seen another kitchen knife quite like it in shape, and have no clue if it has some sort of specialized use? It doesn't seem the sort of blade shape that one might expect for general-use (chef's, santoku, utility, etc.).

I did a Google image search to no avail.

The blades look to have been scrubbed *hard* with an abrasive pad, as almost all traces of markings are gone. Any sort of assist in identifying the maker, and more importantly the intended use, would be deeply appreciated!

Appreciate the suggestions, but after getting a better look under good lighting tonight, I can say 100% that both knives are K Sabatier. Thoughts as to use/design of the non-Santoku? I can't find anything in the Sabatier shop that looks similar...

I *did* just find an Etsy shop with what appears to be a smaller version of that knife listed as a "Vintage K Sabatier Thiers France Fully Forged High Carbon Stainless Full Tang Ebony Scales Chefs Paring Knife".
