Home cook, Knife knerd, sharpening addict, sharpening gear addict etc. I like high end modern folders of powdered steel, Loveless classic drop point hunters esp in stag are out of my price range but I do imbibe in good artisan copies when budget allows.
I bought 240mm gyutos years ago, a Konosuke HH (before HD was a thing) and Kanehiro AS and never used them much. Having recently taken to 210mm gyutos I now understand why the 240's went unused - they are too long for my cooking situation. So the 240's will be going up for sale/trade.
I tend to be a DIY guy and have reground a few of my knives with noted improvement in performance.
I have lurked here for quite a while, don't know that I have much to contribute in a community of Pro's but will chime in regardless :biggrin:
