What does a kanji actually tell?

Many times the kanji will include the store name, so that could be one factor. The best example of this is a Takada sold by Tsubaya - the right side kanji will be the Tsubaya store kanji and the Takada marks are on the left side instead of the right.
 
Some factories also do OEM with no factory labeling. Factory A makes the knife, but the blade is given a tonya's (or storefront's) kanji. Factory A has no mark on the final knife.

Like the Morihei Hisamoto, JCK, Sugi and Tsubaya marked TF's
