What is a really good kitchen knife?

Im putting together a little gift basket for my husband, he loves to cook but complains all the time about dull knives or knives that have to be sharpened all the time.
Can someone suggest a really good kitchen knife? Im wanting just 1 sharp, dependable, long lasting chef's knife. I dont have a bunch of money so some of those Japanese ones that cost $300 are deff out.
