Few days ago, I was sharpening cheap Yaxell Yukari chef knife and I was surprised how easy it was to sharpen and it took really good edge. In my opinion burr removal was lot easier than other cheap stainless knives that I have sharpened.
According to Yaxell, steel is Movax superior stainless steel, made by Aichi Techno Metal Fukaumi Co. Ltd and blade hardness is 58 Rockwell.
I tried Google but didn’t really find any information about the steel. Does anyone know what steel it is actually and how it compared to other popular stainless steels used in knives? Is it some common steel and Yaxell just have invented new name for it?
