Hello everyone! After 16 years of cooking professionally in classical and american contemporary kitchens I have landed my first sushi job. It's never too late to follow your dreams I guess. Anyways looking for a starter set. Yanagi 240-270mm range and Deba 105-170mm. I would prefer something used and dare I say possibly, stainless. Not trying to break the bank yet. Thanks
