Hey all. New member here. I work as a chef and have an obnoxious knife collection and it looks like I finally found similar crazies like me. I think I listed three knives on my intro collection but it’s more like 40 ish Japanese knives. I had as much as 80 but started giving them away to friends because buying more is so much more fun. My collection is Yoshihiro #2 and kikuichi (virgin carbon) heavy. My favorite affordable ish knife maker is moritaka. But I’ve had a few bangers that cost me $1000+. I’ll probably want to sell some eventually but mostly came on looking for a Ko-nakiri or ko-santoku for my collection.
