    Actually sounds good. Did you use some of the "juice" as spread? and hell, you should've busted out a knife, it will always make you feel that much better. Slightly meditative. Coxhaus, it's an old Godin. One of the last makers of cast iron.

    You're right Dave. The beast could certainly double as a machete... Didn't know that the newer ones are forged lighter nowadays. The weight of the older ones certainly aid in self-driving, but I wonder if the light ones feel like they have more finesse? A 270 Takeda is a whole lot lighter...

    In for the4 win! Nothing like being able to feel a knife before you buy it. The 270 is imo the perfect size for balance and getting the job done. Granted, if you have a really small station, then maybe, maybe, go less. But for me there is no going back and anything shorter slows me down...

    Just a quick thought. If time is not an issue for you, then I would post a "want to buy" here on KKF. I would think someone in the EU would have a decent 270+ Gyuto sitting around collecting dust. My guess you would have a blade within a month at $200 or less.

    I wouldn't buy a new one. Find an old one in carbon as opposed to stainless (assuming that is what it is if it is new) and not spend over 40e/50$. There are a lot of them out there and sometimes the price is too high for the demand. 10" is a classic and handles real well (is about a 255mm)...

    Lol, I just saw this: Glad to see that I am not the only wierdo. Hell, I'll sometimes just grab a stone so I can sniff it. Instant mood enhancer. Make it a touch damp first to really get the perfume to blossom. Each stone has its own character. Even within the same mine. Funny.
