For those of you who have tried the Toyama or Munetoshi bloomery knives from JNS, what are some thoughts on this steel?
Sharpness, edge holding, toughness, ease of sharpening…
I personally think it doesn’t get as sharp as blue or white steel forged by Tanaka or nakagawa. And I find it very hard to sharpen. Let me know if you disagree.
