With the latest batch of Apex Ultra out, I decided I'd finally get around to using up the stock I had on hand. This will be the first of 2 mono-steel gyutos and sujihiki I'm working on at the moment.
The blade is fairly thick out of the spine, with very little taper occurring until the last half of the blade. From there it tapers to a very fine tip. I applied a minimum of convexity to this blade to get the edge as thin as possible BTE, and have done so quite successfully, taking it to within the same parameters of my lighter blades made of 2.7mm stock, I can even flex the edge on a small metal rod. With the additional weight from the thicker material this blade should absolutely demolish anything in its path.
I would classify this knife as a midweight, with laser-like edge geometry.
This blade is designed to be in the style of a Sabatier, albeit somewhat flatter. The original design was something I came up with for a custom last fall. The first 1/3 of the blade out from the heel is very flat, and the curve commences from there.

- Blade: 250mmx50mm Apex Ultra(67-68 HRC) scotchbrite belt finish
- Neck: 20mmx20mm
- Handle: 130mm long, 21mmx23mm tapering to18mmx22mm, burned oak, oiled and waxed
- POB: 55mm from the hande
- Spine: 4.19mm at the neck, 3.12mm at 13.2cm, .70mm 1cm from the tip
- Grind: flat to convex, right hand bias
- Weight: 197g
- Relieved choil and spine
- Edge: .14mm@1mm, .22mm@2mm, .40mm@5mm, .77mm@10mm Measured at the midpoint.
