Looking to buy a yanagi in 30cm length. I am an avid pescetarian and slice fish a lot. But I also have a part time weekend job as sushi chef. Looking for white steel.

I was about to go with the tojiro white 2 30cm yanagi but then I started reading all this stuff about it not being flat and needing a bunch of fixing on coarse stones... and that intimidates me as someone who has never sharpened or touched a single bevel, nevermind fixing one!!

Other suggestions I've seen online are the takayuki and yoshihiro. But I'm not looking to spend a f ton on this, maybe 150-300

The tojiro 30cm white 2 yanagi is only 170$ which is part of the appeal.

If the initial sharpening and any possible rough-stone work is a problem, then seek a vendor who offers honbazuke and request it when making the purchase.

I usually spend a bit more for a quality single bevel of any type but there are some good values out there. My first yani was a Gesshin Uraku, quite good, I later "upgraded" (read spent more) on others but it could have easily been a forever knife.

I can vouch for Takayuki kairyo yanagiba at MTC. They get them with nicer handles and hand engraving. The grinds are really good so for the price the knives are a steal.

For something different I like the Chubo Takayuki kurouchi ones. Also nice handles and hand engraved.

+1 jki will put a nice edge on it for you before they ship it open request, no charge!!
