How about a modified Munetoshi Ku 240? It has a big groove on the right side and has basically zero bevel. You probably won’t need to thin it any more, but it definitely has room to make a stone flat surface and for polishing.

Yes and I basically got I wanted. S grind on the right side and slight convex grind on the left side. It cuts well. Just not as nonstick as I expected. Still good performer though.Was this an attempt at grinding in a hollow/S-grind to the Mune? How'd it go if so?

May I ask what do you use for thinning? Wetstone or belt grinder?
