My first query is to see if someone who reads Japanese can identify the first of three kitchen knives I'd like to learn more about. I've attached pictures here. Assuming this is an appropriate query for this forum I can then post regarding two more.
I purchased this one (I think) in San Francisco, probably in the early 1990s. It has been an excellent knife for my purposes and I use is sparingly. It holds a really wonderful edge.
