Hello all,
Nice to see such a forum. I am a home cook, love Japanese cooking and finally invested in traditional Japanese knives. I bought the Minonokuni *** line from Knifemerchant and they are really good, except for the handles, but I will upgrade them.
While at it I also bought Cerax stones, a stop and a big ass Coticule from Ardennes Belgium.
Love the idiosyncrasies of that knife world, and love cutting food with single beveled knives!
