GorobeixRen love the look and grind but not the shape, absolutely destroyed the sweet potatoes I cooked this week. Also Gorobei recently retired so there won’t be any new ones coming.

Thinned and polished myself, finish isn’t perfect but I say it’s alright. Performance is great tho, it was pretty hard to get a choil of this

Also thinned and polished, right side is 4K kasumi and left side is imperfect mirror, I’ve heard mirror as less drag but more sticking but why not have mirror on cutting and regular finish on the release side, so that’s what I did, right side bias. I can also just put a 4K kasumi on the internet side if you wish

Great little guy but it’s a little too little for me (180mm nakiris all the way)

Massive boi Tetsujin, I think this is one of 2 of these that exist, I haven’t seen any of these ever since then.
Etched and upgraded handle, some small scratches from daily use, I swear myojins have the softest cladding of any knives

Yorokobi, selling since I need the mulah for some more knives and I got another one. I’ve thinned it and it has a finish close to factory with scratches still on it. But I swear to Fujiwara himself this knife will be one of if not the best performing knife you will ever have, it’s in the top3 of mine and I have had close to 50 knives I think

Yup it’s iron clad, that’s why I didn’t specify it as stainless clad as I did for the 270

I’d say 300-320? I don’t have a scale in the house but comparing it to my Mazaki it seems around that weight. It’s alright considering it’s 300x60

Yeah, that would be such a fun knife then. The grind on those knives combined with the weight probably makes it an effortless cutter

Yup and it would last so long too, even if you were to use it every day I’m pretty sure even after 25 years you would still be left with a 240 lol

Y’sure that Tanuki Santoku is iron clad? Sometimes Maxim’s listings aren’t right (either his or Wakui-san’s error). I’ve bought 2 now that we’re stainless when I wanted iron.

From what I can tell, looks like it’s stainless clad based off the light reflections
