Which is better for your knife... using a cutting board or cutting mat ? I've never used a mat and usually just cut on my old laminate countertop at home unless it is something that requires me to pull out a cutting board... which is very infrequently. Would you suggest mat or board ? Tks.

What I wouldn’t suggest is cutting on your laminate countertop.

I’m not sure what a mat is or what it’s made of, but if you are looking for a cutting board:

Plastic-fine and inexpensive. Oxo makes good ones.

Rubber-more expensive but much friendlier to your edges. Tenyro hi soft is a good less expensive option, Sani tuff is ok, hasegawa for high end

Wood-avoid bamboo and acacia. End grain is nice, but side grain is ok.

I'm a big fan of rubber board, asahi and hasagawa are the more popular brands. Having own both, I enjoy my asahi a lot more

I didn't know there was such a thing as a rubber mat. I am a humble home cook and will try a plastic board for now. Been cutting on my laminate countertop for over 20 years and realize that is not the best for better-grade knives. Didn't realize there were so many variations of knives, sharpeners and cutting boards.

I didn't know the existence of the rubber mat for cutting in the kitchen.
But I am not able to find any.
Could anyone put some examples of it?
