It's taken me a little bit to try this out (Moritaka AS 210), but my initial impression is that this is fantastic. I spent hours on a Debado 180, and, while I worked out the low spots and thinned it a bit, I just couldn't get it where I wanted. This is it. Very thin behind the edge but not fragile feeling, it's nicely convexed. I've only just done one small batch of mirepoix, but no problem with the carrots. Look forward to further investigation.]

Oooooo nice, I have a knife I'd like reground and was wondering who to ask, I'll check them out! Thanks for the tip!!
 
I'd like to think I'm proficient on stones by now, but this was a big job. Ryan did really great work. If you look at their website, they've got a link to get you started.
