I took a pancake recipe I've used in the past, cut it in half, added cornmeal, added starter discard. I cook it in way more butter than you would expect to get the crunchy ring around the edges. I upped the buttermilk and eggs to soak the cornmeal properly, and to make the cakes less "tall". I think I have my process figured out. super easy, super fast. (don't over mix the batter, you want it lumpy as heck)


My pancake, for 3 people.
1.5 cups of flour

2 table spoons sugar
.75 teaspoon of salt
1.5 teaspoons of baking powder
.75 teaspoons of baking soda

1.5 cups of buttermilk
1 tablespoon of corn meal soaked in the buttermilk
2 small eggs
1/4 cup of sourdough starter, optional, mixed into buttermilk.
 
From now on I’m calling it sourdough offal.

Sounds good! How long did you soak your corn meal? Was it coarse or fine meal? Thanks!
 
Sounds delicious. Never dipped into a starter, because my wife claims that she does not like sourdough. Certainly, piques my curiosity though.
I used to think I "didn't like sourdough." What I meant is that I don't like the style of bread that is called "San Francisco Sourdough." It's too tangy for me, not what bread should be IMO.

But the term "sourdough" is also used to mean any starter, and by far the best bread and pizza dough in the world is made that way. It does not seem possible to not like that kind of sourdough.

I agree. When I went to make sourdough at home, my wife said she didn’t like sourdough, but it turns out she loves my bread. What she doesn’t like are the extremely sour and tangy loaves that are in the SF style. With a home grown starter, there are quite a few ways to make it more or less sour. Most of the loaves I make are not sour at all.
 
kinda my point. if anyone makes a sourdough bread, they are using a discard. and I find the other things to make with the starter is more interesting than the bread.
Lol. Your post here differentiates discard from starter otherwise you'd have called them starter pancakes, right? What's it mean to you? Let's use your words.

Dude... I responded to someone else about how I don't use discard then you asked me why and tried to convince me I do use discard based on some weird definition that doesn't even match your own posts, lol. Thanks for your approval on what I do with my sourdough 😉
