Evan Antzenberger Honyaki

205x52mm, 186g. Second owner purchased from BST. Has been used and sharpened but in good condition. Full mirror finish, it currently has a electric blue patina on it but is absolutely gorgeous. I’m definitely on the fence about selling this one but I need the money to fund a Milan.

Halcyon Forge S grind


220x56mm, 180g wrought iron with 1.2519 core and a Spalted Maple handle. Purchased second hand from BST. Has been used and sharpened but in good condition. Tons of character in the wrought and a gorgeous handle, the S grind performs great.

Lonsted S grind cleaver


185x90mm, 372g. San mai 1.2562 with really nice wrought and a mirror finish. Takes on a beautiful electric blue patina. Handle is bog oak and reindeer antler. Thick at the handle with the best taper I've ever seen on a cleaver. Second owner, purchased from BST I’ve used it lightly and it’s never been sharpened or stropped. Has a small patch of scratches that are only visible in certain light, I tried to show them in the last picture.

Watanabe Pro Nakiri


180x60mm, 218g Yasuki blue steel core with stainless outer, and a Kurouchi finish. Has an Octagonal shaped Enju wood handle with a horn hilt. Purchased directly from Shinichi, has been used lightly and sharpened once. Still in great condition.

That HF used to be mine. Its unique (for Joe) forged geometry makes it quite special. I don’t recall him using this style geometry too often. One could call it a forged S grind, I suppose. The high bevel also makes it fun to drive, plus this is very much my favorite blade profile/shape of Joe’s.
I let this one go, along with about half my collection, simply because I’m no longer working in professional kitchens. It is very much missed.
